~ 1cup soft butter, 1 1/3 cups raw cane sugar, a glug of molasses, a splash of haitian vanilla and 2 eggs all placed in kitchen aid stand mixer with whisk looking attachment - mix on medium
~ next, add 2 cups of unbleached flour, 1/3 cup wheat flour, a pinch and then another of sea salt, 1 tsp baking soda, a little ground flax and wheat germ and maybe a few oats, a little cinnamon, ginger, nutmeg or cloves or my favorite "mixed baking spices" made by tropical heat
~ mix on low to start then gradually move to medium speed. unless you like the big puff! that happens when you head straight for high speed, which, i agree is fun some days. if you like that, skip low and medium and smile.
~ finally, remove bowl from mixer and mix in dark chocolate chips. eat some dough and give a spoon to others near. after that's been enjoyed, then spoon onto cookie sheets and bake at 370 until the middle is still squishy and the edges golden.
~ not much fun to make when sugar and dairy are not part of your current diet
